  • 1 pound lean ground beef
  • 1 1/2 pounds russet potatoes, scrubbed and cut into 1/2-inch cubes
  • 12 ounces frozen broccoli florets
  • 1 small onion, diced
  • 1 tablespoon olive oil
  • 1 teaspoon paprika labeled gluten free
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • Black pepper to taste
  • 1/2 cup water

Directions

  1. 1Wash hands before and after handling the raw beef, keep it separate from ready-to-eat foods, and sanitize the work area
  2. 2Heat the oil in a large lidded skillet over medium heat
  3. 3Add the potatoes, water, half the paprika, half the garlic powder, half the salt, and pepper
  4. 4Cover and cook 12–14 minutes, stirring twice, until the potatoes begin to soften
  5. 5Add the onion and ground beef
  6. 6Cook uncovered 8–10 minutes, breaking the beef into small pieces, until it reaches 160°F
  7. 7Carefully drain excess fat if needed
  8. 8Stir in the broccoli and remaining seasonings, cover, and cook 4–6 minutes until the broccoli is hot and tender and the potatoes are fully cooked
  9. 9Divide among four plates
  10. 10Refrigerate leftovers within 2 hours and use within 3–4 days
