Ingredients

- ✓1 pound lean ground beef
- ✓2 cups cooked rice
- ✓1 can (15 ounces) tomato sauce labeled gluten free and yeast free
- ✓1 small onion, diced
- ✓1 cup shredded cheddar cheese, optional
- ✓1 tablespoon olive oil
- ✓1 teaspoon Italian seasoning labeled gluten free
- ✓1/2 teaspoon garlic powder
- ✓1/2 teaspoon salt
- ✓Black pepper to taste
LET'S COOK
Directions
- 1Heat oven to 375°F and lightly oil a baking dish
- 2Wash the peppers, cut them in half from top to bottom, and remove the seeds
- 3Arrange the eight pepper halves cut-side up in the dish
- 4Heat the oil in a skillet and cook the onion 4 minutes
- 5Add the beef and cook, breaking it apart, until it reaches 160°F, then carefully drain excess fat
- 6Stir in the rice, labeled tomato sauce, Italian seasoning, garlic powder, salt, and pepper and heat until steaming
- 7Spoon the filling evenly into the pepper halves and top with optional cheese
- 8Cover with foil and bake 20 minutes
- 9Uncover and bake 8–10 minutes more until the peppers are tender and the filling is steaming
- 10Divide two pepper halves per person and refrigerate leftovers within 2 hours
