  • 2 cans (5 ounces each) tuna in water, drained, labeled gluten free and yeast free
  • 1 pound russet potatoes, peeled and cut into 1-inch pieces
  • 1 large egg
  • 1/2 cup certified gluten-free rolled oats, pulsed into coarse crumbs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried dill
  • 1/2 teaspoon salt
  • Black pepper to taste
  • 2 tablespoons olive oil, divided
  • 1 pound frozen cut green beans
  • 1 lemon, cut into wedges

Directions

  1. 1Wash hands and scrub the potatoes before peeling
  2. 2Place the potatoes in a saucepan, cover with water, and boil 10–12 minutes until tender, then drain well and mash
  3. 3Let the potatoes cool for 5 minutes, then mix with the drained tuna, egg, oat crumbs, garlic powder, dill, salt, and pepper
  4. 4Shape the mixture into eight equal patties with clean hands
  5. 5Heat 1 tablespoon oil in a large nonstick skillet over medium heat and cook four patties 4–5 minutes per side until golden and the centers reach 160°F
  6. 6Repeat with the remaining oil and patties, using a clean plate for the cooked patties
  7. 7Meanwhile, cook the green beans according to package directions until steaming and tender
  8. 8Serve two patties and green beans per person with lemon wedges
