- ✓1 pound russet potatoes, peeled and cut into 1-inch pieces

- ✓1/2 cup certified gluten-free rolled oats, pulsed into coarse crumbs
- ✓1/2 teaspoon garlic powder
- ✓1/2 teaspoon dried dill
- ✓1/2 teaspoon salt

- ✓2 tablespoons olive oil, divided
- ✓1 pound frozen cut green beans
- ✓1 lemon, cut into wedges

Directions
- 1Wash hands and scrub the potatoes before peeling
- 2Place the potatoes in a saucepan, cover with water, and boil 10–12 minutes until tender, then drain well and mash
- 3Let the potatoes cool for 5 minutes, then mix with the drained tuna, egg, oat crumbs, garlic powder, dill, salt, and pepper
- 4Shape the mixture into eight equal patties with clean hands
- 5Heat 1 tablespoon oil in a large nonstick skillet over medium heat and cook four patties 4–5 minutes per side until golden and the centers reach 160°F
- 6Repeat with the remaining oil and patties, using a clean plate for the cooked patties
- 7Meanwhile, cook the green beans according to package directions until steaming and tender
- 8Serve two patties and green beans per person with lemon wedges
- 9Refrigerate leftovers within 2 hours and use within 3–4 days
