WHAT YOU'LL NEED

Ingredients

  • 8 bone-in chicken drumsticks, about 2 1/2 pounds
  • 1 cup certified gluten-free cornmeal
  • 1/2 cup gluten-free 1-to-1 flour
  • 2 large eggs
  • 2 tablespoons milk or unsweetened dairy-free milk
  • 2 tablespoons olive oil
  • 1 teaspoon paprika labeled gluten free
  • 1 teaspoon garlic powder
  • 3/4 teaspoon salt
  • Black pepper to taste
  • 1 pound frozen green beans

LET'S COOK

Directions

  1. 1Heat oven to 425°F, place a wire rack on a rimmed sheet pan, and brush the rack with oil
  2. 2Keep raw chicken and its juices away from other foods, then wash hands and sanitize the work area
  3. 3Beat the eggs and milk in one shallow bowl
  4. 4Mix the cornmeal, flour, paprika, garlic powder, salt, and pepper in another
  5. 5Dip each drumstick in the egg mixture and then coat it fully in the cornmeal mixture
  6. 6Place on the rack without crowding and lightly brush or drizzle with the remaining oil
  7. 7Bake 35–42 minutes, turning once, until crisp and every drumstick reaches 165°F at the thickest part without touching bone
  8. 8Use clean tongs and a clean platter for the cooked chicken
  9. 9Cook the green beans until steaming and tender
  10. 10Divide two drumsticks and green beans per person
  11. 11Refrigerate leftovers within 2 hours
