  • 1 1/2 pounds russet potatoes, cut into fries
  • 1 cup certified gluten-free cornmeal
  • 1/2 cup gluten-free 1-to-1 flour
  • 2 large eggs
  • 2 tablespoons milk or unsweetened dairy-free milk
  • 3 tablespoons olive oil, divided
  • 1 teaspoon paprika labeled gluten free
  • 1 teaspoon garlic powder
  • 3/4 teaspoon salt
  • Black pepper to taste
  • Ketchup labeled gluten free and yeast free, optional

  1. 1Heat oven to 425°F and line two rimmed sheet pans
  2. 2Keep raw chicken and its juices away from other food, wash hands after handling it, and sanitize the work area
  3. 3Toss the potatoes with 1 1/2 tablespoons oil, half the paprika, half the garlic powder, half the salt, and pepper and spread them on one pan
  4. 4Bake the fries 30–35 minutes, turning once

  7. 7Dip each chicken tender in egg, coat it in the cornmeal mixture, and arrange it on the second pan
