  • 2 medium sweet potatoes, scrubbed or peeled and cut into 1/2-inch cubes
  • 12 ounces frozen cut green beans
  • 1 small onion, diced
  • 1 tablespoon olive oil
  • 1 teaspoon paprika labeled gluten free
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried thyme labeled gluten free
  • 1/2 teaspoon salt
  • Black pepper to taste
  • 1/2 cup water

  1. 1Keep raw chicken and its juices away from the vegetables, wash hands after handling it, and sanitize the work area
  2. 2Heat the oil in a large lidded skillet over medium heat
  3. 3Add the sweet potatoes, onion, water, half the paprika, half the garlic powder, half the thyme, half the salt, and pepper
  4. 4Cover and cook 10–12 minutes, stirring twice, until the sweet potatoes begin to soften
  5. 5Add the chicken and remaining seasonings
  6. 6Cook uncovered 8–10 minutes, stirring often, until every piece of chicken reaches 165°F
  7. 7Stir in the green beans, cover, and cook 4–5 minutes until steaming and tender and the sweet potatoes are fully cooked
  8. 8Use a clean spoon to divide among four plates
  9. 9Refrigerate leftovers within 2 hours and use within 3–4 days
