  • 1 pound lean ground beef
  • 2 pounds russet potatoes, peeled and cut into chunks
  • 3 cups frozen peas and carrots
  • 1 small onion, diced
  • 1 1/2 cups labeled gluten-free beef broth
  • 2 tablespoons cornstarch labeled gluten free
  • 2 tablespoons butter or olive oil, divided
  • 1/2 cup milk or unsweetened dairy-free milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • Black pepper to taste

Directions

  1. 1Heat oven to 400°F and lightly oil a 9-by-13-inch baking dish
  2. 2Cover the potatoes with water and boil 15–18 minutes until tender, then drain and mash with the milk, half the butter or oil, and half the salt
  3. 3Meanwhile heat the remaining butter or oil in a large skillet and cook the onion 4 minutes
  4. 4Add the beef and cook, breaking it apart, until it reaches 160°F, then carefully drain excess fat
  5. 5Stir in the peas and carrots, garlic powder, thyme, remaining salt, pepper, and 1 cup broth and simmer 5 minutes
  6. 6Whisk the remaining broth with the cornstarch, stir it into the filling, and cook 2 minutes until thickened
  7. 7Spread the filling in the dish and spoon the mashed potatoes evenly over the top
  8. 8Bake 18–22 minutes until bubbling and the center reaches 165°F
  9. 9Rest 5 minutes, divide into six portions, and refrigerate leftovers within 2 hours
