Ingredients

  • 1 1/4 pounds beef sirloin or round steak, cut into 1-inch pieces
  • 1 1/2 pounds russet potatoes, cut into 1/2-inch cubes
  • 2 bell peppers, cut into chunks
  • 1 large onion, cut into chunks
  • 3 tablespoons olive oil, divided
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika labeled gluten free
  • 1/2 teaspoon dried oregano
  • 3/4 teaspoon salt
  • Black pepper to taste
  • 8 metal skewers or wooden skewers soaked in water for 30 minutes

Directions

  1. 1If using wooden skewers, soak them in water for 30 minutes
  2. 2Wash hands, keep raw beef separate from vegetables that will not be cooked, and sanitize the work area
  3. 3Heat 2 tablespoons oil in a large lidded skillet over medium heat
  4. 4Add the potatoes, half the paprika, half the garlic powder, and half the salt, cover, and cook 18–22 minutes, turning every few minutes, until browned and tender
  5. 5Toss the beef, peppers, and onion with the remaining oil, paprika, garlic powder, salt, oregano, and pepper
  6. 6Thread the beef and vegetables onto the skewers without crowding
  7. 7Broil on a foil-lined sheet pan 4–6 inches from the heat for 10–14 minutes, turning twice, until the beef reaches at least 145°F
  8. 8Transfer to a clean platter and rest 3 minutes
  9. 9Serve two kabobs with fried potatoes per person and refrigerate leftovers within 2 hours
